NutriLabeler Demo Tutorial

Please take 10-15 minutes to do this tutorial. You will then see how easy it is to use the NutriLabeler Ingredient Database to construct a recipe (formula) for a food product, then produce a Nutrition Facts label from that recipe.

We recommend that you print these instructions. Of course you can just follow along here on the web while you try out the NutriLabeler demo, but it's easier to have hard copy.

Please take a look through this tutorial even if you're not actually running the demo program, but otherwise these instructions assume you have downloaded the NutriLabeler Demo program, unpacked it, and installed it to a folder on your hard drive. If you need instructions for unpacking /installing the demo, click here.

While using the tutorial, please be aware that the database supplied with the demo is only a very small portion of the 6000+ entry database supplied on request when you purchase NutriLabeler.

New features not in demo: Also please note that this demo version of NutriLabeler does not possess some of the newer features of NutriLabeler, including the following:

1. Choice of two styles of search in the Foods Database: "Starts with" or "Contained in".
2. "Notes" command at the Opening Screen to allow recording of written information about any product.
3. Y2K compliance of the date field in the Opening Screen.
4. Additional calculations pertaining to water loss in baked products.
5. Export/Import commands for the Ingredient Database.
6. Ability to add data to the Ingredient Database from an existing Nutrition Facts label.

Run your copy of the Demo program

From Windows Explorer or File Manager, double-click the NLDEMO program.

The screen shown below is the Opening Screen in the NutriLabeler demo program.

GO TO INGREDIENT DATABASE SCREEN

From the "Opening Screen" shown above, choose the "Ingredient Database Screen" by pressing the letter I.

You should then be at the Ingredient Database Screen, shown below.

START A NEW RECIPE

From the Ingredient Database Screen, choose "New recipe" by pressing the letter N.

As shown below, enter the filename TUTORIAL , then press ENTER to accept this filename and proceed, and press ENTER again to add ingredients now.

You should now be at the screen shown below, from which we can construct a recipe.

ADD INGREDIENTS TO RECIPE

Let's first add 4.23 lbs of eggs to the recipe, as follows:

  • Choose Add ingredient by pressing the letter A.
  • Then, as shown below under "Ingredient to find:", type in EGG and press the ENTER key.

  • The ingredient database now comes up on the screen, with the highlight positioned at the first "EGG" entry.

  • As shown below, use the DownArrow to cursor down to "EGGS, WHOLE, RAW", and press ENTER.

  • In the "units of weight" box, use the DownArrow to highlight POUND, and press ENTER.

  • Then type in 4.23, as shown below, and press ENTER.

You have now added the first ingredient to the recipe, and your screen should look like the screen below.

Now repeat the above "Add" process to add 2.7 pounds of flour as follows:

  • Press A, then type "flour" (no quotes) and press ENTER
  • Highlight one of the flour entries and press ENTER
  • Then highlight POUND again and press ENTER
  • Then type 2.7 and press ENTER

Repeat the above "Add" process to add 4.1 pounds of milk as follows:

  • Press A, then type milk and press ENTER
  • Highlight one of the milk entries and press ENTER
  • Highlight POUND again and press ENTER
  • Type 4.1 and press ENTER

The recipe at this time should appear similar to the one in the screen below, although you may have chosen a different flour or milk.

At this point, if you'd like to add any additional ingredients, please do so. Otherwise, we'll proceed to convert this recipe to a data set so we can make a Nutrition Facts label from it.

OTHER FEATURES OF THE INGREDIENT DATABASE SCREEN

Before converting this recipe to a data set, examine the choices at the base of the computer screen (see screen above) to see which options are available in connection with recipes. Most of these are supported in the demo version.

"Make composite ingredient" is not supported in the demo version but a boxed screen explanation of this option is provided.

CONVERT RECIPE TO A DATA SET AND SEND TO THE SERIES SCREEN

In order to convert the recipe to a data set, choose "Send data to SERIES" by pressing the letter S, then press Y to proceed.

You should now be at the screen below entitled "ENTER CHARACTERISTICS OF DATABASE SERIES" with the cursor in the date field.

Press ENTER to move the cursor to the "Series Descrip." field, and type in a description such as "Tutorial formula" and press ENTER.

Now move to each field in turn, filling in data as shown in the screen above:

  • In the "Serving weight" gram field, type in the gram weight of a single serving of this product, such as 45 and press ENTER.
  • In the "Serving weight" ounce field, the ounce weight (1.61) has already been calculated from the weight entered in the gram field. (You may also enter ounces in the ounce field, and NL will calculate grams). Press ENTER to leave the ounce field.
  • In the "Svg.Size" field, enter the serving size as it will appear on the label, such as "1 bar (45g)" and press ENTER.
  • Skip the Common household measure, then type in the number 4 in the "Number of Servings per container" field, and press ENTER.
  • A data Series generated from the database is always assigned as a Type C Series, so you may not choose this here.
  • Under "FDA Reference weight..", enter 40, then choose g as the unit in the "Ref Wt units" field.

Leave the remaining fields as 0 values, and press the PgDn key, then Y to accept the entered data. When you are asked if you wish to return to the Opening Screen, press Y to answer Yes.

BACK AT THE OPENING SCREEN...

You should now be back at the Opening Screen, and the Opening Screen should now have your new entry in the "Description of Data Series" window, as shown below. (Press Home, then End, to re-draw your screen to exactly match the screen shown below).

PROCEED TO SERIES SCREEN

Now, we'll select this Series and proceed to the Series Screen, where we can generate a Nutrition Facts label and see other features regarding this data set. To select the "Tutorial formula" Series, either highlight it and press ENTER, or highlight it and press S. You will then be taken to the "Series Screen" as shown below.

The values for nutrients ("Data") in this screen are the 100g data set generated by NutriLabeler from the Tutorial Food Product recipe, and represent values per 100g of recipe.

Please note that the value for "Sugars" is zero. This is because the chunk of the old USDA Survey (and Handbook 8) database sent out with the demo version contains no sugars data. When you purchase NutriLabeler, WholeGrain Software now includes the sugars-containing "Food and Nutrient Database for Dietary Studies", so sugars will automatically be included in recipes/formulas.

VIEW NUTRITION FACTS LABEL

To see the Nutrition Facts panel for this food product, choose "Label" by pressing L, then press L again to specify that the label be displayed onscreen.

The label screen will then appear, as shown below. To see the rest of the Nutrition Facts panel, press the down arrow, or press the End key.

Notice that this label does not meet FDA's typographical specifications---NutriLabeler does not produce camera-ready copy, but does produce the close facsimile shown below, either printed directly or saved as a text file.

Press ENTER to return to the Series Screen.

VIEW CALCULATIONS FOR LABEL VALUES

To see the calculations that were employed in arriving at the label values, choose "Showcalcs" by pressing S. Then press ENTER to choose the default display of calculations for the Serving weight. See screen below.

Since we are dealing with a single data set from the ingredient database, the columns for SD (standard deviation), Mult (multiplier), SDfact (standard deviation factor) and AdjAvg (adjusted average) aren't relevant, so you can ignore them here. [They would be useful only if you had more than 1 data set from analytical labs, or if you had estimates of standard deviation for nutrient values and wished NutriLabeler to adjust your label values to account for variation in nutrient values.]

The %DVraw (percent of Daily Value, raw) column shows the pre-rounded label values, and the last two columns show the rounded values as they will appear on the label. "Raw" means unrounded.

When a Series comes from the database, Calories are, by default, not calculated via the usual Calorie values (4 Cals per gram of carbohydrate and protein, 9 Cals per gram of fat), but rather are calculated from the Calorie value reported in the database Calorie field. Calories from fat are calculated as shown at the bottom of the above screen, in this case by multiplying 2.02 grams of fat times 9 Calories per gram to yield 18.14 (pre-rounded) Calories from fat. This value is rounded to 20 for the label.

NutriLabeler lets you choose whether to calculate Calories from either the Calories field (the default) or by applying the 4/9/4 multipliers to grams of carbohydrate, fat, and protein.

Press ENTER to return to the Series Screen.

CONTENT CLAIMS

You may press C to see which nutrient content claims are allowed for this product, but recall that sugars data are missing for this product in the demo version, and it is not, in reality, "Sugar free".

Several of the other functions in the Series Screen are not supported in the Demo, but they have on-screen explanations.

MODIFY TUTORIAL RECIPE

To modify the recipe you constructed, press ESC to return to the Opening Screen, then press Alt-i to re-load the recipe and go to the Ingredient Database Screen. Make changes as desired, then re-send (press S) to update the data set, then return to the Opening Screen and Select the "Tutorial Formula" again.

To exit the Demo program, press ESC From the Opening Screen. From anywhere in the program, you may press the ESC key and be returned to the Opening Screen.

END OF TUTORIAL

This concludes the Tutorial.
